Ingredients and spices that need to be Take to make Balu Shahi 😋â¤ï¸:
- For Sheera
- 2 1/2 Cups sugar
- 1 1/4 Cups water
- few drops Lemon juice
- For Dough
- 500 gm Flour
- 5 tblspn Ghee
- 5 tblspn Yogurt (room temperature)
- 1/4 teaspn Baking soda
- 1-2 pinch Salt
- 1/4 Cup or as required Water
- Ghee for frying
- Pistachio for garnishing. (Optional)
Steps to make to make Balu Shahi 😋â¤ï¸
- In saucepan, add sugar and water,mix well and cook on low flame until sugar is dissolved and continue cook until syrup becomes thick.Make 1taar sheera.
Add lemon juice,mix well & set aside.
Sugar syrup (sheera) is ready. - For Dough:
- In bowl add flour, baking soda, salt and sift together.
Add ghee and mix well. Mix until dough became crumbling. - Add yogurt and mix well until crumbled.
- Gradually add water and mix until combined
(don’t over knead),
break dough into pieces place over each other, cover and let it rest for ½ hour.
Now Grease hands and working surface with oil and flatten the dough & roll it. - Cut the dough with the help of the cutter
cut & place over each other to make layers.
repeat this process for 3,4 times then make long loaf, - Cut small balls, you can make approx 15-16 Balushahi with this dough
- Take a small dough,make a ball and with the help of the thumb press from the center.
- In wok, add ghee and let it melt, fry dough on low flame for 20-25 minutes.
- After frying, add bhalo shahi in warm sugar syrup (sheera) and leave them for 5 to 7 min per side and take out in a serving plate.
- Garnish with pistachio or silver paper & serve.
- Tips.
1:. When sugar completely dissolves in sheera, then don't mix sheera with any spoon or spatula.
2: don't over knead the dough,its should be like non knead dough, resting the dough is very important,
3: fry on very low flame in start, don't use any spoon, let it cook very low flame, when balushahi start flaoting, then you can increase little flame and turn it occasionally, when its completely cooked from inside.bubbling in oil reduced, give perfect colour of Balushahi then tranfer thes
