PALAK MUTHIA/MUTHIYA

Muthiya is a Gujarati dish, which is prepared by steaming and consumed steamed or fried. The name Muthia is derived from the way it is made, from 'gripping' action of the fist. They are known by various names in different parts of Gujarat, such as Muthiya, Vaata, Velaniya. Generally various muthiyas are prepared using coarse wheat flour, gram flour , gourd, leafy vegetables, peels of bitter gourd and gourd etc. and tempered with sesame seeds, mustard seeds, cumin seeds and curry leaves.
In winters , we get leafy vegetables in abundance, which are very healthy and we should consume them more. Here is spinach muthiya.

  1. 1 cup coarse wheat flour
  2. 1 cup handva flour
  3. 1/4 cup gram flour
  4. 2 cup finely chopped spinach
  5. 2 tbsp chilli-ginger paste
  6. 2 tbsp oil
  7. 1 tbsp sugar
  8. 1 tbsp lemon juice
  9. 1 tsp turmeric powder
  10. 1/2 tsp baking soda
  11. Salt to taste
  12. For tempering:
  13. 3 tbsp oil
  14. 1 tbsp sesame seeds
  15. 1 tbsp mustard seeds
  16. 1 tbsp cumin seeds
  17. leaves Few curry
  18. Pinch asafoetida
  19. Coriander for garnish

Steps to make to make Palak Muthiya

  1. Mix all flours, turmeric powder, salt sugar and oil. Add baking soda over spinach and pour lemon juice over it, let it bubble. Then mix well, also add chilli ginger paste to it.
  2. Prepare muthiyas with hand and arrange them in a sieve like plate and steam cook them like dhokla on slow to medium flame. It will take about 25-30minutes to cook.
  3. Once steamed, you can relish it with raw oil just right off the steamer.
  4. For tempered muthiya, let it cool a little, then cut it into slices.
  5. Heat oil, add all seeds and let them crackle, then add curry leaves and asafoetida and sliced muthiya and saute it for while. For crispy muthiya, let it cook and saute more on slow flame, while flipping occasionally. Adding more oil makes them more crispier and delish.
  6. Serve hot with green chutney, ketchup etc.

    Note:
    Can skip handva flour and increase quantity of wheat flour.
